Cuvee Tradition Rose 2017


Vinification : Grapes are harvested at the coolest point of the night. Destemming berry by berry at the vine, destemming and crushing at the vat. After 6 hours of maceration, the free run juice is removed and the fruit pressed. Only the strained part is incorporated into the free run juice. The juice is left to settle for 48 hours at 7°. The vat is racked and 10g/l of yeast added. The temperature is raised to 14-15° and maintained at this level throughout the fermentation process. As soon as alcoholic fermentation has taken place the wine is racked

Tasting : Round beginning with a nice freshness followed by citrus, flowers, rose and white pepper notes

Alcohol : 13

Serving suggestions : The Cuvee Tradition 2016 rose should be served between 8 and 12°. Very enjoyable now and should ideally be drunk within the year. Perfect for aperitifs and to accompany summer meals, white or red meat, barbecues, delicatessen meats, fish and shellfish, mixed salads, poultry, pizzas, fruit salads, summer desserts...
