Soil type : Recent alluvial soil giving good filtration

Cultivation : Double cordon de Royat system and trellising. Density is over 4 000 grapevines/hectare.

Cabernet Sauvignon 2016

 

Vinification : The grapes are destemmed and crushed. Traditional vinification methods lasting 16 days. A first racking is carried out after malolactic fermentation. This is followed by two winter rackings. The wine is clarified after the second winter racking and then filtered and immediately put on sale

Serving suggestions : The Cabernet Sauvignon 2012 can be drunk immediately or kept for about 3 years. It should be served at 15 to 17° or cooler in summer. This wine goes well with red meats, grilled meats, duck, delicatessen meats, desserts with red fruits.
